How to Select Fruit Concentrates and Purees for Different Food Applications

The same fruit ingredient can behave very differently in a beverage, yogurt, bakery filling or confectionery formulation.

That is why selecting a fruit ingredient by fruit name alone is rarely enough for industrial production.

Large global ingredient companies organize fruit solutions around applications because properties such as flavour, colour, suspended solids, mouthfeel and processing behaviour determine whether an ingredient is appropriate for a specific formulation.

Beverages and nectars

In beverages, Brix, acidity, flavour intensity, clarity and colour are major selection factors.

A clarified apple or white-grape concentrate may be suitable when visual clarity is required, while cloudy ingredients or purees can be selected for fuller-bodied beverages.

The ingredient must also fit the final dilution and processing conditions.

Dairy and yogurt

Fruit preparations used in yogurt and dairy applications usually require more attention to texture and fruit body.

Purees can therefore be particularly useful where visible fruit character and mouthfeel are desirable.

Acidity compatibility with the dairy system must also be reviewed during formulation.

Bakery and fillings

For bakery fillings, water management and consistency become extremely important.

An ingredient that performs well in a drink may be too fluid for a filling.

The formulation team may therefore choose puree, puree concentrate or another fruit preparation based on required viscosity and bake stability.

Confectionery

Confectionery manufacturers often need concentrated flavour and solids without adding unnecessary water to the recipe.

Concentrates can offer an advantage in such systems, but acidity, colour and interaction with other ingredients still need to be considered.

Sauces and food service

Purees and tomato-based ingredients can provide texture as well as flavour.

The relevant parameter is therefore not simply fruit percentage but the behaviour of the ingredient during mixing, heating, pumping and final storage.

The correct procurement approach

Before requesting a quotation, the manufacturer should provide the supplier with the intended application.

A supplier can make a better recommendation when it knows whether the ingredient will be used in a juice, yogurt, filling, ice cream, sauce or other formulation.

Juicerfo already has a dedicated Applications page covering beverage, dairy, baby food, bakery, confectionery, sauces, desserts and ready meals, so these technical articles should internally link back to that page.

Buyer takeaway

The question should not only be:

“Which fruit do we want?”

It should also be:

“Which format of that fruit will perform correctly in our process and final product?”
