Fruit juice concentrate is one of the most widely used fruit ingredients in industrial food and beverage manufacturing. Beverage producers, dairy manufacturers, bakeries, confectionery companies and ingredient distributors use concentrates when they need fruit solids, flavour, colour or acidity in a more compact format than single-strength juice.

Under the Codex General Standard for Fruit Juices and Nectars, concentrated fruit juice is produced by physically removing part of the water from fruit juice. The product can later be reconstituted with water or used directly as an ingredient in another formulation.

Why manufacturers use fruit juice concentrate

Removing part of the water reduces the volume that must be transported and stored. For industrial buyers, this can improve logistics efficiency while allowing the manufacturer to formulate the final product to a defined soluble-solids level.

Large ingredient suppliers also offer several concentrate formats rather than treating concentrate as one uniform product. Commercial portfolios may include clarified, cloudy, decolourised and application-specific concentrates.

The correct product therefore depends not only on the fruit species but also on the final application.

What does Brix mean?

Degrees Brix, written as °Bx, is one of the first parameters buyers review when sourcing a juice concentrate. In practical commercial evaluation it indicates the level of soluble solids measured in the product.

A higher concentration generally means that more water has been removed, but Brix alone does not define overall quality.

Two concentrates with similar Brix values may differ significantly in acidity, colour, turbidity, flavour profile, pulp content and processing history.

For that reason, professional procurement should never be based on a Brix value alone.

Clear vs cloudy concentrate

Clarified concentrate is processed to reduce suspended material and is commonly selected when clarity is important in the final beverage or formulation.

Cloudy concentrate retains more suspended fruit components and is useful when the manufacturer wants a fuller visual or sensory profile.

The right option should be selected according to the final product rather than assuming one format is inherently better.

Important quality parameters

For industrial procurement, a Technical Data Sheet should be reviewed together with an actual or representative Certificate of Analysis.

Depending on the fruit, the review may include Brix, pH, titratable acidity, colour, turbidity, microbiological parameters and fruit-specific authenticity or contaminant indicators.

The AIJN Code of Practice provides fruit-specific reference guidelines used by juice processors and traders for evaluation of juice identity, quality and authenticity.

Packaging and logistics

Fruit concentrates may be supplied in different industrial packaging formats depending on product stability and supply chain requirements.

Aseptic bag-in-drum systems are widely used for many fruit ingredients. Other products may require chilled or frozen logistics.

Packaging therefore needs to be agreed together with the storage temperature, expected shelf life, transport conditions and handling procedure.

The applicable storage conditions should always come from the product-specific TDS rather than from a generic rule.

What buyers should request before ordering

A serious B2B purchase should establish the exact product, required Brix, acidity range, packaging, order quantity, destination, intended application and technical documentation before the order is confirmed.

The approved specification should then become the commercial reference for the shipment, while batch-specific analysis provides evidence for the actual production lot.

The best fruit juice concentrate is not simply the concentrate with the highest Brix or lowest price.

It is the product whose technical specification, application performance, documentation, packaging and supply conditions match the buyer’s manufacturing requirements.
